Cranberry Orange Foil Packet Chicken
4 Weight Watchers Points Plus per chicken breast
6 boneless skinless chicken breast
1/2 cup orange juice
2 T honey
1 can whole cranberry sauce
2 tsp. allspice
Mix oj, honey, whole cranberry, and allspice in a deep airtight container. Mix well. Add chicken breast. Marinade for about a half hour. Rip 6 pieces of aluminum foil two times the size of each chicken breast.
Spray each piece of foil with cooking spray. Place a single chicken breast on each piece of foil. Pour 2-3 Tbsp. of the marinade over each chicken breast. Fold foil packet seam side up. Place on a foil lined cookie sheet. Bake 25-30 min. in an oven preheated to 425 degrees.

No pictures today, the family gobbled it up before I could take pictures. Each piece is worth 3 Weight Watchers Points Plus. Super easy slow cooker recipe, Orange Lemon Asian Chicken:
5 boneless skinless chicken breast frozen
1 large orange
2 T lemon juice
2 T brown sugar
garlic seasoned to taste
3 T soy sauce
Chinese 5 spice about 2 1/2 tsp
Place chicken in crock pot squeeze juice of one whole orange over pieces. Sprinkle remaining ingredients over chicken. Cook for 6 hours on low. I had baked sweet potato and corn with the meal. I also made boxed scalloped potato for DH and DS.

OMG! I am so stuffed. Great dinner tonight. Turkey Italian Sausage with peppers and onions, baked sweet potato, and green beans. The turkey sausage was made by Purdue. Each hearty sized link is 4 Weight Watchers Points Plus. The whole dinner was ready in 20 minutes.
Again made on the counter skillet. Started with about a TBSP of EVOO. Turned pan to 275 degrees. Added onions and peppers. Cooked with lid on about 8 minutes. Added sausage and cooked for and additional 10 minutes. I added seasoning to veggies before adding the sausage.
November 7, 2011 Low Fat No Fuss Chicken Parmesan. This recipe makes 5 servings @ 8 Weight Watchers Plus Points Per serving. Each serving is about a cup and a half. I served this with garlic bread. One slice of bread 3-4 points. (depending on brand. I use store brand frozen.)
No Fuss Chicken Parmesan
4 boneless skinless chicken breast cubed
2 dry cups Barilla Penne Plus Pasta
1 26 oz. jar pasta sauce. I used Ragu Garlic
4 cups water
Salt, Pepper, Basil, Garlic Oregano, Parsley
1/2 c. part skim shredded mozzerella cheese
1/4 c. Kraft Parmesan (you know the kind with the green label.)
This was made in our counter top skillet. The size is about 12 x 12. Turn skillet to 350 degrees. Place pasta and water in skillet. Put lid on. Allow to come to a bubbly boil. Remove lid and allow water to cook off. Add cubed chicken, sauce, and seasonings to taste. Mix well and cook about 10 minutes, or until the chicken is cooked through. The last five minutes remove lid and add cheeses. Stir well.

Panko Chicken
5 boneless skinless chicken breast
2 egg whites
1 1/4 c. Panko style breadcrumbs
2 tsp. basil (dried)
2 tsp. oregano (dried)
1 T. Garlic Garlic (Tastefully Simple)
Preheat oven to 400 degrees. Place egg whites in a shallow bowl. Place Panko and seasoning in a second shallow bowl. Blend Panko and seasoning well. Line a cookie sheet with aluminum foil and spray lightly with olive oil cooking spray. Lightly salt and pepper each chicken breast. Dip each chicken breast into egg white allow excess to drip off. Dredge in Panko mix. You may have to pat some of the Panko mix onto the chicken breast. You want the chicken breast to be well coated, but not thickly crusted. Bake in preheated oven for 30 to 35 minutes. Allow to cool on cookie sheet for 5 minutes to avoid breading sticking to foil.

Creamy Chicken Stew in a Crockpot
4 boneless skinless chicken breast halves cut into pieces
3 medium potatoes cubed
2 c. baby carrots
3 stalks celery chopped
1 small onion diced
2 10 3/4oz. cans of 98% fat free cream of _________ soup (you choose I am using cream of mushroom)
2 tsp. thyme
1 tsp. black pepper
1 1/2 tsp. allspice
Combine all ingredients in a slow cooker that has been sprayed with a cooking spray. Mix well and cook on LOW for 7 to 8 hours.

More chicken planned for dinner today. Sticky Asian Chicken one serving is one breast = 5 Weight Watchers Points Plus points.
Sticky Asian Chicken
I prepare this in a counter top covered electric skillet. You can easily make this stove top too. You can also add any veggie. I am serving to a picky group here that likes their veggies separate. (Sheesh!)
5 boneless skinless chicken breast cubed
3/4 c. Hoisin sauce (easily found in Asian section of grocery)
2 tsp ginger
1 T Tastefully Simple Garlic Garlic
1 T olive oil
Turn skillet to 300. Place oil and cubed chicken in skillet. Add remainder of ingredients. Mix well. Cook approx 20 minutes stirring occasionally.
Serves 4 .

Ahh, the age old daily question. I am hoping to post dinners here at least three times a week. So lets get started. What's for dinner tonight? A recipe I found on www.skinnycrockpot.com, Applesauce Chicken. A serving in one chicken breast and equals 4 Weight Watchers Points Plus points.
Recipe for Applesauce Crockpot Chicken
4 boneless skinless chicken breast frozen
2 4oz. containers of cinnamon applesauce
1/2 cup water
Garlic Seasoning of Choice. I used Tastefully Simple Garlic Garlic
Vinegar of choice
One small onion of choice chopped. I used a red onion.
Pour water into crockpot. Place chicken in crockpot. Pour applesauce over chicken pieces covering each piece well. Sprinkle garlic over chicken and applesauce. Place onion pieces over chicken. Splash vinegar over chicken. I just had a couple shakes over each piece. Place lid on crock and cook on low for about 6 hours.
