Magically Moist Chicken
5 boneless skinless chicken breast
1 sleeve of saltine crackers
8 oz. Oikos Greek Yogurt
Seasoned Salt I use Tastefully Simple Seasoned Salt
Preheat oven to 350. Crush sleeve of crackers in clear zipper bag. Pour crumbs into a shallow dish. Mix desired amount of seasoned salt and or other seasoning. Place Oikos yogurt into a second shallow bowl. Dredge chicken first through yogurt then through cracker mix. Place each coated breast on a foil lined cookie tray that is lightly sprayed with cooking spray. Bake for 45 min. Remove from oven and allow to cool for 5 min. so the chicken does not stick to the foil.
Makes 5 servings @ 7 Points Plus per serving.
Crock Pot Chicken
5 boneless skinless chicken breast
2 small apples any type your choice
1/4 c. worcestershire sauce
3 T. brown sugar
3 T. Malt vinegar
1 T. Garlic Garlic (Tastefully Simple)
Cut apples into quarters. Place in crockpot. Pour worcestsershire sauce, brown sugar, vinegar and garlic into crock. Mix well. Place chicken breast on top try to coat with mix. Cook on low 6 - 8 hours. I usually mix the chicken after cooking for about two hours to make sure it is well coated by the marinade.
Makes 5 servings @ 4 Points Plus per serving
Turkey Meatloaf
1 lb. ground turkey
1/2 c. bread crumbs
4 T. ketchup
2 tsp. worcestershire sauce
1 small onion finely diced
1 egg
Preheat over to 350.
Mix turkey, bread crumbs, 2 T. ketchup, worchestershire sauce, onion and egg until well blended. Pour into a meatloaf pan lightly sprayed with cooking spray. Form to meatloaf shape. Spread remainder ketchup on top of meatloaf.
Bake uncovered for 45 minutes. Allow to cool for 5 minutes before cutting.
Makes 4 or 5 servings depending how cut. If cut to 4 servings each servings = 6 points. 5 servings = 5 points.
